Saffron has long been the world's most costly spice by weight. It is used to colour and flavour food. So, when this royal saffron comes together with rice, dried fruits and other spices, a dish with aromatic and tantalising flavours is born, the Zafrani Zarda. The name Zarda comes from the Persian word “zard” meaning yellow, hence the dish also alludes to its yellow colour that is imparted by saffron. Back in the days of the Mughals, this delicious rice dish was popular in weddings and royal feasts. Still a popular dish today and especially enjoyed during Eid. As regal as it is, this rice dish is also super easy to prepare. So, here’s the recipe that you can try in the comfort of your homes. Enjoy!

INGREDIENTS

Desi Ghee- ¼ Cup

Cashew (halves)- 8

Almond (chopped)- 5

Raisins- 2 Teaspoons

Dry Coconut- 2 Teaspoons

Cardamom- 2 Pods

Cloves- 4

Water- 1 Cup

Saffron- ¼ Teaspoon

Basmati Rice- ½ Cup

Sugar- ½ Cup

PREPARATION

  1. Soak ½ cup basmati rice for 30 minutes.
  2. While the rice is soaked - In a large kadai/wok heat 2 tbsp ghee and roast 8 cashews, 5 almonds, 2 tsp raisins and 2 tsp dry coconut. Roast till golden brown on low flame and keep aside.
  3. Add 2 pods cardamom and 4 cloves in the remaining ghee.
  4. Add 1 cup of water, ¼ tsp saffron. Further, add soaked basmati rice and mix well.
  5. Cover and cook on medium flame for 10 minutes.
  6. Mix gently, making sure rice is half cooked.
  7. Add ½ cup sugar, 2 tbsp ghee and roasted dry fruits, mix gently making sure sugar melts.
  8. Cover and simmer for 5 minutes, stir in between to prevent from burning.
  9. Cook until the rice is cooked completely. Do not overcook as rice turns mushy.
  10. Serve hot Zarda garnished with few chopped nuts.
