Malai Phirnee(Phirni): Why it is our showstopper dessert


We don’t like playing favourites, especially when it comes to our own desserts. But if we were to be put in a bad Bollywood movie hostage like situation, and the only implausible means to escape was to pick a favourite dessert, we’d have to go with Malai Phirnee(Phirni).

Its rich decadence, the presentation with just the right amount of pistachios and saffron strands, and the delightfully traditional serving in an earthen “Shikora” definitely make Malai Phirnee a favourite in our office. Outside of our own bias, the Malai Phirnee has rightfully earned its place as a go-to dessert after any meal, and especially so during the festive season.

So, what is it about Malai Phirnee that has earned it such a fan following and turned it into our showstopper dessert?

A Rich History:

The history and origin of Malai Phirnee is unclear, but it is believed to have originated during the Mughal Empire in India. And to this day, this dessert is still prepared in a traditional method and even served in a traditional style. The Finest Quality Ingredients Used: It is essentially prepared with milk, rice and sugar. Saffron and green cardamom add to the drama. Pistachios take its taste to another level.

An Enchanting Cooking Process:

Preparing Malai Phirnee is almost like narrating a tale with a beautiful ending. The rice is soaked before being ground into a paste. The milk is boiled in a pan and simmered for few minutes. The rice paste is added to the milk and stirred continuously to achieve a smooth and thick consistency. Sugar is added to sweeten the flavour. Saffron strands are then added along with the cardamoms and pistachio. Some chopped pistachios are kept aside for garnishing. Now, that’s a delicious cooking tale!

It’s Served Royally:

Malai Phirnee is served in earthen bowls also known as “shikoras”. Once the Malai Phirnee is put in the bowls, it is garnished with the chopped nuts, along with silver paper or “chandi warq”. The whole process of serving adds a royal element to the dessert.
