From Rita's Kitchen: Leena's Mom

Leena's mom, Rita has always made the weekends special for the family preparing a mini feast for them. Rita's Mutton Kofta Recipe was always Leena's favourite though since childhood, and she always ate the most of the dish. Nothing has changed, Leena still relishes it in the same way.

For the Kofta

Mutton mince- 300 g

Corn flour- 2 tbsp

Green Chilli (finely chopped)- 2 tsp

Fresh coriander leaves (finely chopped)- 4 tbsp

Ginger (grated)- 1 tsp

Garlic (minced)- 1 tsp

For the Curry

Oil- 3 tbsp

Cloves- 2-3

Black cardamom- 1-2

Black peppercorn- 4-5

Bay Leaf- 2

Onion (coarsely grounded)- 1/2 cup

Ginger (grated)- 1 tsp

Garlic (crushed) - 1 tsp

Green chilli (slit in half)- 2

Coriander powder- 2 tsp

Red chilli powder- 2 tsp

Turmeric powder- 1 tsp

Salt to taste

Garam masala powder- 1/2 tsp

Fresh coriander- 2 tbsp


Mix all the ingredients to make kofta in a bowl.

Make small balls from the mixture and keep aside.

For the gravy, heat oil in a pan.

Add crushed cloves, black cardamom, black peppercorn and bay leaf, and fry for a few seconds.

Add onion and fry on medium heat until slightly browned.

Add ginger, garlic and green chilli, and fry for 2-3 minutes.

Add coriander powder, red chilli powder, turmeric powder, salt and garam masala powder, and cook for another minute.

Add 3 cups of boiling water in the masala, and bring the gravy to a boil.

Once the gravy starts to boil, add the kofta in the simmering gravy.

Cook on low heat for 10-12 minutes until koftas are cooked.

Add more water so that the gravy thickens.

Garnish with fresh coriander. Serve hot.
