From Radhika's Kitchen: Neha's mom
Neha has been relishing her mom Radhika's Shahi Tukda with Rabri recipe since her childhood, and this dessert lovingly prepared by her mom is very close to her heart. Eating it again during lockdown makes her "relive all those childhood moments without caring for the calories".
Shahi Tukda with Rabri
6 slices of bread
1/2 cup of sugar
1/2 cup water
2-3 strands of kesar (saffron)
Ghee for frying
1 litre of full cream milk
6-7 tablespoon of powdered milk
1/2 teaspoon of cornflour
Nuts for garnishing
Take a pan, add water and sugar on high flame and make sugar syrup.
Add strands of kesar and keep it aside.
Cut the slices in triangle shape and deep fry them in ghee.
In the meanwhile, add milk in a heavy bottom pan and boil it.
Once it boils, add milk powder on low flame and keep stirring so it doesn’t lump up.
Keep stirring the milk on low flame and start collecting cream on the side of the pan.
Once milk is reduced to half, dissolve cornflour in water and add it to the milk. This will give the milk a creamy and thick texture. Turn off the flame.
Dip fried bread in sugar syrup and place in a serving bowl, adding rabri on top.
Garnish with nuts and serve hot or cold as you like.
